I thought I had a nutrition problem. My fridge can be full of organic produce that quickly withers away⦠like it knows I'm never going to use it. Turns out I didn't have a nutrition problem. I have a time problem.
By the time I finish work, my brain has made a thousand decisions. The last thing it wants to see is a cutting board and a simmering pot waiting to be used, no matter how good it is for me.
Could I?
Absolutely.
I could also churn my own butter and raise chickens. But that's not the season of life I'm in.
So I asked a different question.
βWhat if healthy meals didn't have to start from scratch?β
I'm not auditioning for Beat Bobby Flay. I'm trying to eat something with actual color before 2 p.m. So I started looking for ways to eat healthy in a time crunch, without meal prepping all weekend and color-coding bento boxes.
Then I remembered:βOne small step at a time.β
Saturday: rice in the rice cooker. Sunday: turmeric carrots. Monday: a baked sweet potato (microwave for me) topped with avocado, organic vegetable soup, and a handful of blue corn tortilla chips.
Ten minutes later, lunch was ready.
No drive-thru.
No handful of peanut butter pretzels and a Coke I'd later justify as "fuel."
No guilt.
Just real food that fits into a real workday.
That became the inspiration behind this new series: βFuel Stops.β
Simple performance food for people who have work to do, trails to run, and lives to live.
Because healthy meals shouldn't take an hour. Sometimes they just need ten minutes.
